20 fluid ounces milk
11 ounces grated coconut
2 tablespoons peanut oil
12 ounces rice
2 onions, grated
Salt, to taste
In a medium saucepan, bring milk to the boil. Add coconut and mix well. Remove from heat, cover, and let stand for about 1 hour.
Heat peanut oil in a frying pan. Add rice and onions. Fry, stirring constantly, for about 3 minutes.
Add the rice and onion mixture to the coconut and milk mixture. Season with salt and bring to the boil.
Reduce heat, cover, and simmer gently for 30 minutes or until the rice has absorbed the liquid. If the mixture becomes too dry before the rice is tender, adding a little more milk or water.
