Bean Cakes (Ta'miya or Falafel)


  • 4 cups dried fava beans, soaked overnight and drained
  • 3 large onions, coarsely chopped
  • 10 peeled garlic cloves
  • 1 large bunch of parsley, rinsed with stems removed
  • 2 teaspoons cumin
  • salt to taste
  • 1 teaspoon pepper
  • 1 teaspoon ground coriander seeds
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • vegetable oil



  • Place beans, onions, garlic, and parsley in a food processor. Process until beans are ground.
  • Add cumin, salt, pepper, coriander, baking powder, and baking soda. Process until a thick paste forms.
  • Take mixture from processor and form small, round patties.
  • Heat oil in a saucepan and fry patties, turning them over several times, until they turn golden brown. Serve plain or inside pita bread with lettuce and tomato.
